Have you ever wondered what to do with these prickly, fibrous vegetables? Here’s my recipe for Roasted Artichoke Hearts ready for the oven. I cut one large artichoke into quarters and sprinkled them with olive oil, lemon juice, black pepper and course salt. Roast for 30-40 minutes on 180. Now the waiting game commences …
