The Best Cream Cheese Icing!

Who says icing has to be sickly sweet?  I prefer to use a tangy cream cheese icing.  It works exceptionally well with Red Velvet Cupcakes, Carrot Cakes and Vanilla Cakes/Cupcakes.

Cream Cheese Icing

1 tub (230g) cream cheese (low fat is fine)
1/2 cup softened butter
2 cups icing sugar
2 tsp lemon juice
1 tsp vanilla essence
